Paul Stradner joins forces with Jean-Georges Klein

It all began back in October. A new duo is now at the cooking range of our restaurant (2
Michelin stars): Austrian Paul Stradner, formerly two-star Chef at the Brenners Park Hotel & Spa in Baden-
Baden, Germany, has joined forces with French Chef Jean-Georges Klein.

The two have known each other for many years (Klein trained Stradner at L’Arnsbourg, its former three-star
restaurant at Baerenthal, in the Northern Vosges). They are well matched, both in personality and in the
kitchen. Two men, two nationalities, two generations. Yet, despite their different styles, they share a common
understanding and a passion for the blended tastes that define haute cuisine. The result? Creative and
innovative dishes which aim to surprise you by exploring fresh gourmet combinations.

To mark Paul’s arrival and celebrate the launch of his co-operation with Jean-Georges, the pair have devised
a dish which reflects their fields of expertise and their heart regions – Alsace for Jean-Georges and Baden-
Württemberg for Paul: Autour du chevreuil de nos régions, en deux services (“Roe deer of our regions, in
